Orange Carrot Cookies

3/4 c. Shortening
1 c. sugar
1 egg
2 tsp. baking powder
1 tsp. vanilla
1 orange, juice and rind 7 Tbsp.
1 c. carrot
1/2 tsp. salt
3 c. flour

Mix together. Bake at 375 for 10-15 minutes.

Icing:
Butter
powder sugar
orange juice

I made a couple of changes - butter instead of shortening and used 1 cup whole wheat flour to replace 1 cup white flour. I was able to make 39 cookies using my 1 tablespoon scoop. 86 Calories per cookie if not frosted.

1/4 cup butter
3 T orange juice
2 1/3 cup powdered sugar
125 calories per cookie frosted
